				<div class="et_pb_text_inner"><p>There’s a good chance that you’ve been sitting around on night with your friends and family enjoying a few gin and tonics when the question has hit. You’ve already refreshed yourself on <a href="https://headlands.com.au/what-is-gin/">What is Gin?</a> and <a href="https://headlands.com.au/the-three-ways-to-make-gin/">The Three Ways to Make Gin</a>, but that only answers half of your query. What are you mixing it with? What IS tonic water, anyway?</p>
<p>Put simply, it is carbonated water that has quinine dissolved into it, but there’s a lot more than that. Historically seen as a way to immunise against malaria due to the quinine component, tonic is most often used as a mixer paired with gin (some even thought that the gin was actually the part that helped you!). Whilst traditionally consumed for its bitter flavour, there are a large number of sweet tonics that are being released, typically using citrus as a sweetener.</p>
<p>Quinine is sourced by boiling chopped pieces of bark from the cinchona (<em>pronounced sin-ko-nah</em>) tree. This is the only source of natural quinine and it is crucial not to add too much as it can be toxic in high quantities. The water is brought to a simmer and left for 15-30 minutes until the syrup becomes thinner in consistency.</p>
<p>To infuse more flavours, it is as simple as adding extra ingredients! Whilst typically added at the same time as the cinchona bark, here you can be experimental. You can add it pre boil, whilst boiling, whilst it is simmering or any combination of the three. The flavours will vary depending on what you add and when you add it, becoming less in line with a traditional tonic water when stronger citrus flavours are evident.</p>
<p>It will naturally depend on your taste preferences, but a good tonic needs to be subtle so it doesn’t overpower the flavour of your gin. When we mix drinks with our gin, we recommend a tonic/soda water combo as the mixture to enable the flavours of our gin really shine through. </p>
<p>So if tonic is full of quinine, why doesn’t it save you from malaria? Firstly, quinine is no longer considered the most effective method of treating malaria so it is no longer the first primary treatment (artesunate has proven more effective and since 2006, has been the recommendation of the World Health Organisation) [2]. If the WHO recommendation was ignored and the use of quinine was still desired, it all comes down to the content required. <span> </span> </p>
<p>Plasmodium Falciparum is the causative agent of malignant malaria [3]. When fighting “uncomplicated” Plasmodium Falciparum (the simple form that is not resistant to other treatments), <em>Quinine (Rx)</em> (better known as Qulaquin) is used. These are quinine sulphate capsules and a recommended dose of 648mg every 8 hours for 7 days is required [4].</p>
<p>Put more simply, this means that you need 1,944mg of quinine per day. This should be easy, right? It’s just under 2 grams, after all… When we mix our gins with tonic, we use the <a href="https://capi.com.au/">Capi</a> Native Tonic. This tonic comes in 250ml bottles and the quinine content is 0.05%. In order to get to 2 grams of quinine, you’d need to drink 16 bottles of the tonic water.</p>
<p>When it comes down to it, tonic water in its simplest form is just water that has been flavoured using quinine. Whilst it’s important to get a good quality tonic water, it’s critical to ensure you’re pairing it with a great tasting gin to create the perfect combo.</p>

<p><strong></strong></p>
<p>This simple yet famous Italian cocktail is a great way to enjoy gin, especially Australian craft gin. As with most cocktails, the exact historical origins are cloudy, but it is commonly accepted that the Negroni came from Florence, Italy in 1919.</p>
<p>Count Camillo Negroni loved the Americano cocktail, which is very similar to the Negroni, but on this particular night, the Count was keen to loosen up! He asked Fosco Scarselli to swap the soda water for gin to get the party started and the Negroni was born! [1]</p>
<p><span style="font-size: large;"><strong>Ingredients:</strong></span></p>
<p>30 mL gin</p>
<p>30 mL sweet red vermouth (aka vermouth rosso)</p>
<p>30mL Campari</p>
<p><span style="font-size: large;"><strong>Directions:</strong></span></p>
<ul>
<li>Fill a glass with ice</li>
<li>Add the gin, vermouth and Campari. One shot of each</li>
<li>Stir with a long spoon for 20-30 seconds until the drink is absolutely freezing</li>
<li>Strain the cold mixture into a short Old Fashioned type glass</li>
<li>Add a large piece of ice</li>
<li>Garnish with an orange peel or slice of orange</li>
</ul>
<p> What gin should you use? Any gin that you like! If you are in Australia, there is a huge range of delicious Australian gins to try.</p>
<p>Fun fact- Campari used to use smashed up insects/parasites to get its red colour, called cochineals. They stopped using this as of the year 2006 and now use commercially available dye. Cochineal is still found as a colourant in meat, drinks, ice cream, yoghurt, lollies and more!</p>

				<div class="et_pb_text_inner"><p>You might have just read out article, <a href="https://headlands.com.au/what-is-gin/">What is gin?</a> Now that you know what it is, let’s delve a little deeper into how gin is made. There are three main methods:</p>
<h1>1.    Maceration</h1>
<p>Gin botanicals such as juniper, coriander, citrus peels, angelica root, orris root, cardamom and cassia are soaked in strong alcohol in the still for a period of time. They can be soaked in another container and then pumped into the still, but the pump needs to be able to handle solids.</p>
<p>This is often one day, but can vary depending on the distillery.</p>
<p>The botanicals can be left whole or chopped up or powdered. More finely powdered botanicals will result in greater extraction of the compounds present in that botanical. This might seem like a simple task. If I don’t have enough of a certain flavour, I’ll just powder it so the alcohol can access a very high surface area. However, botanicals are often not the same all the way through. A seed might have a certain flavour on the outside skin of the seed and quite a different flavour inside if ground up. Think of this like an orange. The outside is very different to the inside. If you don’t powder the seed, the majority of the extraction will come from the outer layer. This results in limitless combinations of gins!</p>
<p>After the gin botanicals have been soaked or “steeped” in the strong alcohol. The still is heated. The alcohol and compounds extracted from the botanicals will carry over as vapour into a condenser, which simply cools the gas down, back into a liquid.</p>
<p>There you have it! Gin made by the maceration method.</p>
<h1>2.    Vapour infusion</h1>
<p>Instead of steeping the botanicals in the strong alcohol like in the maceration method, the botanicals are placed in some sort of container ABOVE the alcohol in the still. The still is heated up, and the alcohol vapour will pass through the botanicals, extracting some flavour, before being send to the condenser to be cooled back into a liquid. This is the method used by Bombay Sapphire (other distilleries do use it as well!).</p>
<p>The container can be a special polymer mesh bag which is hung inside the still, not touching the liquid, or it can be a metal container packed with botanicals which is joined to the still boiler by a metal tube.</p>
<p>Vapour infusion results in a different flavour than macerated gin. Firstly, the temperature is lower, so the botanicals are less “cooked,” which is not necessarily good or bad, just different. For instance, the temperature in the still boiler might be 85 degrees C, but the gas which boils off and passes through the botanicals will be at a lower temperature.</p>
<h1>3.    Steeping without distillation</h1>
<p>This is only an acceptable method of making gin in a survival situation with access to alcohol and botanicals but no still.</p>
<p>Take strong alcohol, soak juniper and other botanicals in it for a period of time. Strain, drink. No quality distillery in the world uses this method. When botanicals are extracted, there is no way to select which flavours are included in the gin. For instance, the harsh, turpentine flavours in some juniper berries will be extracted. If gin is distilled, the distiller can stop the still at any time, leaving harsh compounds in the boiler so they don’t taint the final product.</p>
<p>HOWEVER, steeping can be an excellent addition to infuse a high quality gin made with the maceration or vapour infusion method with a fruit or other special botanical. Sloe gin is made this way. Beautiful colour, sweetness and other compounds can be added to a gin this way which would normally not carry over from the still. Some gins are steeped in Thailand’s butterfly pea flower, which gives them a strong purple colour and ability to change colour in a gin and tonic due to a reaction with the carbonated water, cool stuff! Daalgaal gin by Headlands Distilling Co. is made by taking a maceration/vapour infusion Australian gin called Boobialla and then steeping it in locally hand foraged Illawarra Plum fruit, giving it a deep purple/red colour and extracting a unique taste but also several compounds which have proven health benefits. Illawarra Plums have a higher antioxidant concentration than blueberries, which is extracted into the spirit!</p>
<h1>What about vacuum distillation?</h1>
<p>At normal atmospheric pressure, water boils at 100 degrees C and ethanol (drinking alcohol) boils at 78 degrees C.</p>
<p>If you dramatically lower the pressure, by sucking gas out of the still at the condenser outlet, you can get water and ethanol to boil at less than 25 degrees C!!!!!</p>
<p>This method isn’t a method on its own, but can be combined with either the maceration or vapour infusion gin making methods. Higher temperatures accelerate chemical reactions and also extraction of compounds. By distilling using a vacuum at low temperature, some flavours which may be altered or even ruined by high temperature can be preserved, or a much lighter flavour of gin can be obtained. Also, if a certain flavour in a botanical which is undesirable but isn’t very soluble in water or alcohol is present, you can basically stop it from dissolving. Higher temperature results in greater solubility/flavour extraction.</p>
<h1>What about one shot or multiple shot gin?</h1>
<p>Again, either maceration or vapour infusion methods can be done as a “one shot” or “multiple shot” gin.</p>
<p>One shot means all the botanicals are placed in the still or vapour basket at once.</p>
<p>Multiple shot means botanicals are distilled individually or in groups, but not all together, and then blended back together to make the final gin. Multiple shot allows a distillery to keep a concentrated form of a single botanical and then easily switch up the recipe.</p></div>

				<div class="et_pb_text_inner"><p>While the exact history of the martini is unknown, the Australian martini traces its lineage all the way back to 2019, with a release of a gin made exclusively from Australian native juniper, Boobialla.</p>
<p>Coupled with a delicious Australian dry vermouth, the Australian martini is a perfect way to appreciate the subtle flavour of native juniper, which is much less intense that the common juniper, typically from Europe.</p>
<p>The first step is to chill the glass! Since the martini is a very strong cocktail, getting it as cold as possible is an important part of the cocktail. If you have access to a freezer, place the glass in the freezer. If not, fill the martini glass with ice while you mix the other ingredients to chill it.</p>
<p>Ingredients:</p>
<p>60 mL Boobialla Australian native gin (2 shots)</p>
<p>15 mL Maidenii Dry Vermouth (1/2 a shot)</p>
<p>Procedure:</p>
<p>Take a large glass ~500 mL</p>
<p>Fill the glass with ice</p>
<p>Pour in the gin and vermouth</p>
<p>Stir gently for 30 seconds</p>
<p>Stirring gets the cocktail really cold, as well as provides necessary dilution.</p>
<p>Take the glass out of the freezer or remove the ice from the glass if you chilled it with ice.</p>
<p>Strain the stirred mixture into martini glass, making sure no ice goes into the glass.</p>
<p>Garnish:</p>
<p>A twisted citrus peel</p>
<p>OR</p>
<p>One or three olives. It must be an odd number of olives! Green olives, not black.</p>

<p><span style="font-size: large;"><strong>Cheese</strong></span></p>
<p>The creamy, fattiness of a strongly flavoured cheese is a perfect accompaniment for gin. Cheese has a pallet coating effect, the alcohol will taste even smoother and fuller bodied than normal, especially if sipping straight. Vintage cheddar and camembert are two great options, with goat’s cheese increasing in popularity lately. Australia has loads of great local cheese makers, make sure to give them your support!</p>
<p><span style="font-size: large;"><strong>Cucumber</strong></span></p>
<p>Hendrick’s gin has a large cucumber component which has received international recognition. You can piggy back off Hendrick’s cucumber and gin pairing and include cucumber based dishes while drinking gin. Cucumber salads are a great option, as well as cucumber based canapé or appetisers such as small bite sized cucumber sandwiches or cucumber slices topped with feta, sun dried tomatoes and basil.</p>
<p><span style="font-size: large;"><strong>Quince paste</strong></span></p>
<p>A great addition to any cheese platter, especially when paired with gin and camembert with crackers.</p>

<p><span style="font-size: large;"><strong>Salmon</strong></span></p>
<p>There are various ways to cure salmon and lately, some really tasty recipes have emerged online for curing salmon with gin. Smoked salmon also pairs well with gin, with a squeeze of citrus giving an additional flavour boost. <p><span style="font-size: large;"><strong>Berries</strong></span></p>
<p>If you can find them, native Australian muntries are perfect here! If not, blueberries, raspberries and strawberries are a great snack to pair with gin. You can also put them into your gin and tonic directly for a tasty fruit cup.</p>
<p><span style="font-size: large;"><strong>Cured meats</strong></span></p>
<p>Salami and chorizo are nice options here. Spicy or mild versions both pair well. Saltiness will enhance the gin’s flavour and the fattiness will provide additional mouthfeel and palate coating.</p>
<p><span style="font-size: large;"><strong>Macadamia nuts</strong></span></p>
<p>Why not use a native Australian nut with your food platter? Macadamias are completely native to Australia. Almonds are another good option, though grown in Australia, they are native to Iran and surrounding countries in Asia [1][2]. If you have Bunya pines in your area, roasted Bunya nuts are another great Australian native option to pair with Australian gin.</p>
<p><span style="font-size: large;"><strong>Coriander</strong></span></p>
<p>Coriander is one of the major ingredients of many gins. Light, fresh Vietnamese style food, rich in coriander is a great pairing for gin, particularly those with citrus notes. If your gin doesn’t have a citrus note, you can simply add a squeeze of lemon or lime to bridge the gap. Rice paper rolls are a delicious and healthy option.</p>

				<div class="et_pb_text_inner"><p>Australia has seen steady growth in the consumption of alcoholic spirits, with sales increasing from 64.4 million litres in 2014 to 66.1 million litres in 2019. The industry is dominated by Diageo Plc who account for over a quarter of sales, followed by Suntory Holdings (10%) and Pernod Ricard (8%)[1] . Whisky remains the largest seller in terms of volume (28 million litres), followed by white spirits (includes both vodka and gin) with 18.1 million litres[2]. Importantly, white spirits have been on an upward trajectory with an average 4.5% cumulative year-on-year volume growth between 2013-18 [3]. This is a remarkable achievement considering that whisky, rum and brandy have all suffered from contraction in volume sales over the same period.</p>
<p>Much of the growth in white spirits comes down to gin. The wide range of products available in the Australian gin segment appeals to a broad range of customers, that span multiple demographics. With the impact of COVID-19 still resonating in our ears, and the growing appetite for homemade cocktails, it is likely that the Australian gin market will continue to grow. Importantly, the frequent release of new products appeals to those that are eager to experiment with new flavour profiles, juniper combinations and botanical aromas. Headlands Distilling Company offers two examples of innovation in the segment with both Boobialla gin (using native Australian juniper) and Daalgaal gin (steeped with Illawarra plums) leveraging these trends. Where Boobialla appeals to consumers wanting to try unique Australian flavours, Daalgaal extends on this trend by coupling unique Australian bushtucker flavours with a visually appealing product that appeals to multiple sensory stimuli.</p>
<p>Interestingly, gin is the most consumed spirit behind whisky, with a recent Roy Morgan survey revealing that 8% of Australians had consumed gin at least once in the previous four weeks[4]. An indicator of the strength of the Australian gin market is demonstrated through consumption patterns among women, who now clearly prefer gin (9.3%) over vodka (6.8%). While these results are promising, we mustn’t forget that the Australian gin market is still dominated by mainstream brands offered by dominant market players such as Diageo and Barcadi (over 4 million litres of gin). Nevertheless, the craft spirits scene in Australia has grown to account for 6% of total spirits volume[5]. With the explosion in craft distilleries, the only way to survive is to differentiate and offer an experience that is unique, yet affords value for money.</p>

				<div class="et_pb_text_inner"><p>Juniper is the main ingredient of all gin. Let’s delve a little deeper into what it actually is!</p>
<p>Juniper or common juniper is a shrub or small tree which is a species of conifer. Conifers are plants which have cones bearing seeds and needle like leaves and are usually evergreen. While there are many types of juniper such as Chinese juniper (juniperus chinensis), Rocky Mountain juniper and Cade juniper (juniperus oxycedrus) [1], the type of juniper used in gin, common juniper, has the scientific name juniperus communis.</p>
<p>Common juniper has the widest range geographically of any woody plant, from really far north to really far south. It has separate male and female plants.</p>
<p>The berries produced by common juniper are the seed cones. We usually think of cones as being conical in shape, but these seed cones are spherical!</p>
<p>A lot of plants will produce and drop their seeds yearly. Not juniper! Juniper seeds/berries ripen over 2 to 3 years [2]. First they will produce a flower and then eventually a berry, this process takes a whole year. In the second year, the berry stays hard and green in colour. The berry usually ripens at the end of the 2nd year or in the third year, when it turns a dark purple, blue, black colour. The plant doesn’t all ripen at once, it will have berries on it at all stages, some flowers, some hard green berries and some ripe.</p></div>

				<div class="et_pb_text_inner"><p>It is the seeds or berries from the juniper plant that give gin its distinctive taste. Flavour of the berries differ slightly depending on the source. Different soils, altitudes, amount of rainball, temperature etc all change the flavour. They have different levels of pine, citrus, sweetness/bitterness and woodiness. The berries used for gin are mainly dried, but some distilleries use fresh. Fresh has the most intense flavour, with the flavour slowly dissipating over time.<br />Gin actually gets its name from juniper, either from the word jenever which means juniper in Dutch or genévrier which means juniper in French.<br />Juniper berries have been part of many historical rituals over the centuries, some using the berries as medicinal ingredients and some burning the wood to produce a fragrant smoke. Research on the health benefits of juniper berries are still being conducted today.</p>
<p>Juniper berries and their oil contain a vast array of compounds, with one study finding 70 compounds present [3]. The main compounds are alpha pinene with ~51%, myrcene ~8%, sabinene ~6%, limonene ~5% and beta pinene 5%. Let us take a closer look at the flavours these compounds are responsible for:</p>
<h1><span style="font-size: x-large;">Compounds in juniper berries</span></h1>
<p>Alpha pinene- Woody, piney and turpentine-like, with a slight cooling camphoraceous nuance and a fresh herbal lift [4]</p>
<p>Myrcene- Terpy, herbaceous, woody with a rosy celery and carrot nuance [5]</p>
<p>Sabinene- Woody, spicy, citrus and terpy with green, oily and camphoreous nuances [6]</p>
<p>Limonene- Sweet, orange, citrus and terpy [7]</p>
<p>Beta pinene- Cooling, woody, piney and turpentine-like with a fresh minty, eucalyptus and camphoraceous note with a spicy peppery and nutmeg nuance [8]</p></div>

<p>What about Australian native juniper? How is it different?</p>
<p>Australian native juniper is the colloquial name of the Australian native plant called Boobialla, scientific name myoporum insulare. It is a completely separate species from common juniper! The berries of Boobialla ripen every year at roughly the same time, though the season can draw on for a few months, it isn’t anything like common juniper with a 3 year time to ripen. The berries of Boobialla have a mild, juniper like flavour, but it is quite different and much less intense. A subtle, flavour. Similar to common juniper, the berries don’t taste very nice if you pick them before they are ripe. Judging the perfect time to pick takes some experience! 				<div class="et_pb_text_inner"><p>Gin has officially made a comeback, with thousands of types on the market and new releases every day, but what exactly is it? Let&#8217;s delve a little deeper!</p>



<p>Gin is over 99% vodka. WHAT? You won&#8217;t believe how many people tell us at markets that they drink gin every day, love it, bathe in it, but are allergic to vodka. Vodka reacts with them badly, makes them angry, etc etc. Once they hear that gin is over 99% vodka, it is like an epiphany, brain explosion and embarrassment all scooped into an ice cream cone and quickly eaten, some liking the flavour. The base ingredient of gin is &#8220;neutral spirit.&#8221; The definition of vodka is a neutral spirit. Neutral spirit simply means alcohol which has been distilled to a very high purity (96%+) which has very little taste, the flavours have been largely removed by distillation. The starting ingredient for vodka or the neutral spirit used as the base of gin can be ANY material containing starch, sugar or even cellulose. However it can get more complicated based on the sugar source. Grains contain starch which can be converted to sugar. Cellulose/biomass such as trees and weeds can also be converted into sugar and then alcohol with a much more complicated process. </p>



<p>Neutral spirit (ethanol) is commonly made from wheat, corn, sugar and grapes, though any sugar or starch source will work. Headlands Distilling Co. makes the base ingredient for our gins from locally grown La Trobe barley. This might come as a surprise, but most gin distilleries don&#8217;t actually make any alcohol! In order to cut the most corners and cut down on labour, most gin distilleries purchase their neutral spirit from huge industrial ethanol fuel plants and start at step 9/10. Which brings us to the next step in making gin, Step 9:</p>



<p><strong>Step 9: The Flavouring</strong></p>



<p>After the neutral spirit has been acquired, the next step is to extract flavours into the spirit from one or more botanicals. The flavour MUST contain juniper to be gin. Juniper, scientific name juniper communis or common juniper is a family of trees/shrubs in the conifer family. It grows small edible berries, the berries are the part which is infused into the neutral spirit to make gin. Once you have juniper, literally anything else edible can be added to make a unique gin, however there are some common themes in terms of ingredients. </p>



<p>Coriander seed is usually the next major ingredient after juniper berries. Angelica root and Orris root are often also present and act to bind flavours together as well as add their own. </p>



<p><strong>Main gin botanicals</strong></p>



<ol class="wp-block-list"><li>Juniper</li><li>Coriander seed</li><li>Angelica root</li><li>Orris root</li><li>Citrus peels (lemon, orange, lime, grapefruit)</li><li>Cassia aka Chinese cinnamon. </li><li>Cardamom</li><li>Nutmeg</li></ol>



<p><strong>Methods for extracting the flavour</strong></p>



<p>There are two major methods to make gin. Direct steeping/maceration and then distilling and vapour infusing. In the maceration method, the botanicals are soaked in the neutral spirit inside the still boiler, at 30-50% alcohol. Some ingredients can be steeped for a day before distilling, some are added directly before boiling. If the neutral spirit is at a higher percent, water is added to bring it to 30-50%. The mixture is heated to boiling. The vapour that comes off the still will have extracted some of the essential oils and flavours from the botanicals. The gas is condensed back to a liquid by passing through a cold tube called a <em>condenser</em>. The gin is left to sit for a period of time so the flavours which have just been ripped out of their solid forms can react together and reach the lowest energy state, where every flavour compound is happy, stable and in equilibrium. This resting period could be a few weeks long, definitely much shorter than for whisky maturation! </p>



<p>The second method, vapour infusion, goes like this. The still is filled with neutral spirit at 30-50% alcohol, but no botanicals are added. Instead, the botanicals are packed into a metal tube above the still. The neutral spirit is heated to boiling, and the vapour coming off the still is fed through the metal tube which is packed with botanicals and then into the condenser to the turned back into a liquid. </p>



<p>Gin comes off the still at 70+% alcohol. It is brought back to around 40% alcohol with spring water. </p>



<p>The two methods provide different flavours, one method is not better or worse than the other. Depending on your taste, you may prefer certain botanicals in the vapour and certain botanicals steeped/macerated. For instance, ginger in the vapour and juniper and coriander directly steeping in the still boiler. </p>



<p>Boobialla gin by Headlands Distilling Co. doesn&#8217;t actually contain any common juniper. Wait a minute, didn&#8217;t I just tell you gin needs to contain juniper? Is this even gin? Good question. Boobialla gin only contains Australian native juniper, known as boobialla. The species is completely different though juniper-like in flavour. We are definitely stretching the definition with this one! The flavour is less pine and more floral. </p>
