Our process begins with a hybrid of 100% Australian wheat and barley. We have a close relationship with the farmers, the grain has complete trace-ability and we know exactly which field the grain going into a particular batch is from.

Next is the fermentation, which is carried out quite cold to avoid the formation of unwanted flavours. This greatly reduces the production rate but results in an exceptional spirit.

The distillations are carried out through a tall column, powered by an electric heating element. Heating and cooling are energy intensive processes, all power used at Headlands Distilling Co. is 100% renewable.
