The Headlands Spanish Sherry Cask range is a first release, celebrating our 10 year company anniversary. The whisky is matured in Four Roses Distillery ex-Bourbon casks for four years. This is followed by three years of finishing in an authentic Spanish Palo Cortado Sherry Cask from Jerez.
Palo Cortado sherry is famed one of Spain’s most mysterious styles – a natural transformation that combines the finesse of Amontillado with the boldness of Oloroso. The whisky in this release has tasting notes of toffee, orange peel, salted caramel and roasted almond.
This whisky is part of a rare collection aged in authentic Spanish sherry casks from Jerez de la Frontera. Each release showcases a different sherry style - Pedro Ximenez, Oloroso and Palo Cortado - capturing the essence of Spain's most celebrated wines. “Our whisky journey began with a search for the perfect barley. We worked closely with an Australian grower, Michael Sinclair, who grew several varieties of barley for us to test. We spent countless hours perfecting the milling, fermentation and distillation of the grain to find the ideal variety.
