This whisky began its life in an ex bourbon cask from Four Roses Distillery in the USA – winner of the World’s Best Single Barrel Bourbon at the 2024 World Whiskies Awards. It has then been finished for an additional three years in an authentic Spanish Oloroso Sherry Cask from Jerez.
Oloroso sherry is known for its oxidative ageing, producing notes of cocoa, roasted nuts and sun-dried fruits. The whisky in this release has tasting notes of cocoa, roasted nuts, spiced oak and treacle.
This whisky is part of a rare collection aged in authentic Spanish sherry casks from Jerez de la Frontera. Each release showcases a different sherry style - Pedro Ximenez, Oloroso and Palo Cortado - capturing the essence of Spain's most celebrated wines. “Our whisky journey began with a search for the perfect barley. We worked closely with an Australian grower, Michael Sinclair, who grew several varieties of barley for us to test. We spent countless hours perfecting the milling, fermentation and distillation of the grain to find the ideal variety.
