				<div class="et_pb_text_inner"><p>For anyone who has ever travelled overseas, have you ever wondered why alcohol seems to be so much cheaper than it does in Australia? For example, in most of Europe and the US, you can easily pickup a good bottle of vodka for under $20, which pales in comparison to the $65 plus you need to pay for a decent bottle of vodka in Australia. How can there be such a big discrepancy in pricing across countries?</p>
<p>&nbsp;</p>
<p>The answer lies in the alcohol tax rates adopted by individual countries. Taking 2022 as a benchmark (the year for which comparative international data is most readily available), tax on alcoholic spirits in Australia amounted to $88.91 per litre of ethanol [1]. This translates into $24.89 of tax per 700ml spirit bottle, where the final alcohol concentration is 40% (see Box 1 below for the worked calculation). Most Australian gin and Australian vodka have a final alcohol concentration of 40%, so this is a reasonably good benchmark to work off.</p>

<p>To provide a point of comparison, aside from Iceland and Norway, Australia has the highest alcohol tax rates among OECD (Organisation for Economic and Co-Operation and Development) countries.</p>

<p>In Australia, and many other countries the tax on spirits is calculated differently to tax on beer and wine. Spirits tax is known as excise duty and as of December 2022, this rate was $94.41 per litre of alcohol [2]. The rate is reviewed and adjusted twice per year. As a result, Australian distilleries are faced with a huge tax burden, helping to explain why you’re unlikely to find a craft distillery selling their spirits for less than $50 per bottle.</p>
<p>&nbsp;</p>
<p>Interestingly, recent work by researchers from the US have revealed that the tax pass through rate for excise duty, or the extent to which tax hikes are passed onto consumers differs wildly depending on the product. They found that tax increases led to the price of cognac, Scotch whisky and Cointreau being increased above and beyond the price increase. In contrast, the price of gin did not rise by as much as the tax increase. In other words, the tax is <em>under shifted</em> on gin products, but over shifted on other spirits [3].</p>
<p>&nbsp;</p>
<p>While it’s difficult to generalise from this piece of work, it does highlight that perhaps gin is less amenable to price increases owing to tax rate changes. One potential explanation is the highly competitive nature of the Australian gin market and the tendency for consumers to shop within a given price segment [4]. Price increases may push a product into another category where it is ill-suited to compete. Take Boobialla gin as an example. It retails below the $100 mark, which can act as a mental threshold for many shoppers. Breaching the $100 mark would deter many would be consumers, meaning that as the tax rate increases, it is unlikely that the price point for Boobialla will budge.</p>
<p>&nbsp;</p>
<p>Economists and public health officials will often proffer the need to adopt <em>sin </em>taxes as a way to discourage consumption [5]. These taxes also offer a lucrative revenue stream for the federal government, so it’s unlikely we’ll ever see wholesale changes to this policy stance. Nevertheless, if you ever lament the fact that alcohol prices are so high, spare a thought for the people of Iceland. The tax on a bottle of 40% vodka equates to 4,556 Icelandic Krona (or about AU$47)!</p>

				<div class="et_pb_text_inner"><p>There’s a good chance that you’ve been sitting around on night with your friends and family enjoying a few gin and tonics when the question has hit. You’ve already refreshed yourself on <a href="https://headlands.com.au/what-is-gin/">What is Gin?</a> and <a href="https://headlands.com.au/the-three-ways-to-make-gin/">The Three Ways to Make Gin</a>, but that only answers half of your query. What are you mixing it with? What IS tonic water, anyway?</p>
<p>Put simply, it is carbonated water that has quinine dissolved into it, but there’s a lot more than that. Historically seen as a way to immunise against malaria due to the quinine component, tonic is most often used as a mixer paired with gin (some even thought that the gin was actually the part that helped you!). Whilst traditionally consumed for its bitter flavour, there are a large number of sweet tonics that are being released, typically using citrus as a sweetener.</p>
<p>Quinine is sourced by boiling chopped pieces of bark from the cinchona (<em>pronounced sin-ko-nah</em>) tree. This is the only source of natural quinine and it is crucial not to add too much as it can be toxic in high quantities. The water is brought to a simmer and left for 15-30 minutes until the syrup becomes thinner in consistency.</p>
<p>To infuse more flavours, it is as simple as adding extra ingredients! Whilst typically added at the same time as the cinchona bark, here you can be experimental. You can add it pre boil, whilst boiling, whilst it is simmering or any combination of the three. The flavours will vary depending on what you add and when you add it, becoming less in line with a traditional tonic water when stronger citrus flavours are evident.</p>
<p>It will naturally depend on your taste preferences, but a good tonic needs to be subtle so it doesn’t overpower the flavour of your gin. When we mix drinks with our gin, we recommend a tonic/soda water combo as the mixture to enable the flavours of our gin really shine through. </p>
<p>So if tonic is full of quinine, why doesn’t it save you from malaria? Firstly, quinine is no longer considered the most effective method of treating malaria so it is no longer the first primary treatment (artesunate has proven more effective and since 2006, has been the recommendation of the World Health Organisation) [2]. If the WHO recommendation was ignored and the use of quinine was still desired, it all comes down to the content required. <span> </span> </p>
<p>Plasmodium Falciparum is the causative agent of malignant malaria [3]. When fighting “uncomplicated” Plasmodium Falciparum (the simple form that is not resistant to other treatments), <em>Quinine (Rx)</em> (better known as Qulaquin) is used. These are quinine sulphate capsules and a recommended dose of 648mg every 8 hours for 7 days is required [4].</p>
<p>Put more simply, this means that you need 1,944mg of quinine per day. This should be easy, right? It’s just under 2 grams, after all… When we mix our gins with tonic, we use the <a href="https://capi.com.au/">Capi</a> Native Tonic. This tonic comes in 250ml bottles and the quinine content is 0.05%. In order to get to 2 grams of quinine, you’d need to drink 16 bottles of the tonic water.</p>
<p>When it comes down to it, tonic water in its simplest form is just water that has been flavoured using quinine. Whilst it’s important to get a good quality tonic water, it’s critical to ensure you’re pairing it with a great tasting gin to create the perfect combo.</p>

				<div class="et_pb_text_inner"><p>Without a doubt, early settlers started distilling alcohol the second it was possible though Australia’s first legal distillery was opened in 1822 by Thomas Haigh Midwood in Van Diemen’s Land. It was known as the Sorell Distillery in Hobart. Thomas Haigh Midwood died in September 1823, only getting to enjoy his distillery for one year[1][4]. Beer breweries were encouraged at the time, but distilleries were not permitted until Governor Macquarie realised that distilleries would stimulate grain production and that people were going to distill illegally in the hills anyway &#8211; he might as well get the excise tax benefits [6]. Up until 1856, Tasmania was still called Van Diemen’s Land, named after the governor general of the Dutch East Indies, Anthony van Diemen[2]. The name Tasmania came from Abel Tasman, who was the first European explorer to reach Van Diemen’s land and he knew how to kiss his boss’s ass really thoroughly! While Tasman missed meeting any Aborigines, they knew their land as &#8216;Trowunna&#8217;, &#8216;Trowenna&#8217; or &#8216;Loetrouwitter&#8217; [3].</p>
<p>Distilling in Tasmania grew rapidly in the next few years with another 15 distilleries opening before Governor John Franklin prohibited distilling in TAS in 1838 [5]. Legal distilling in Tasmania ceased for well over a century but the law did not affect mainland Australia.</p>
<p>In 1824, Robert Cooper, James Underwood and F.E. Forbes started Sydney Distillery in Paddington, Sydney, New South Wales, between Old South Head Road and Rushcutters Bay. James Underwood bought out the other two founders around the time of opening after some severe disagreements[11]. We haven’t been able to find out if Sydney distillery produced whisky, though it definitely produced rum and gin, if you know, please let us know! They malted, milled and distilled from grains, so it is possible they made some whisky, though it could have been drunk or sold before reaching the 2 year mark to be legally called whisky.</p>
<p>Underwood&#8217;s Sydney Distillery, later became Abercrombie and Company&#8217;s Glenmore Distillery in 1836. After suffering financial difficulty, it was then turned into a leather tannery [13].</p></div>

				<div class="et_pb_text_inner"><p>Robert Cooper then went on to start his own distillery around the same time, around 1825 (after being bought out of Sydney Distillery), called Brisbane Distillery on Paramatta Rd next to a small stream. Access to lots of quality water was extremely important to early distilleries which were almost always located on water sources. Brisbane Distillery had two 1200 gallon (about 4500 litre) stills, could grind 4000 bushels of grain and produce 2000 gallons of spirits every week [9]. Up until 1838, Brisbane Distillery had produced 85,000 gallons of spirit from grains and 55,000 gallons from sugar[10,12]. We also haven’t been able to find out if Brisbane Distillery produced whisky, but they malted and milled their own grain so it is definitely possible. Raw unaged spirit and gin were both definitely produced.</p>
<p>Japhet White also had a legal distillery running in Bathurst in 1828, producing spirits from grain, though information on this distillery is scarce. An article in the Australian newspaper states how much tax they were collecting from the distillery, the digital copy is blurry and hard to read [30]. Japhet White had a hard time setting the distillery up, they had stored two full years’ worth of grain harvests but hadn’t yet got permission to distill[31].</p>
<p>Sir William Milne, (1822-1895), born in Scotland and skilled in commerce, arrived in Port Adelaide in 1839. In 1845, Milne and his brother in law, John Disher of Oakbank set up set up a wine and spirits business and distillery, Milne and Co Distillers, producing a wide range of spirits [22]. In 1846 the pair also acquired another Adelaide spirits business belonging to Patrick Auld [23]. Milne and Co. was a highly successful business, carrying out manufacturing but also being exclusive agents for imported product lines. It would continue to run for over 100 years, despite changing owners several times. Sir William Milne reduced his role in the successful business in 1857 and moved into politics. Sir William Milne’s son, also William Milne, continued the business. A branch of the business was opened in WA in 1895 and the Thebarton Distilling Company was acquired by the company in 1897. Both whisky and gin from Milne and Co. won first place in the Royal Show, Melbourne for four years in a row, 1931-1934 and was highly regarded [29]. Milne and Co. was purchased by Gilbeys of London in 1946 [26]. Bottles of Milne and Co. whisky have shown up lately at Australian whisky auctions, such as <em>Bond 7</em> [27], and <em>Milne’s Well Matured Specially Selected Whisky</em> [28]. If you’re lucky, you can still find one to buy!</p></div>

				<div class="et_pb_text_inner"><p>F.A Kumnick ran a successful distillery in Lobethal, Adelaide Hills, SA in the 1850’s. They produced mainly brandy, but also other spirits which had a great reputation and could have included whisky [32].</p>
<p>The next legal, large scale whisky distillery to emerge came shortly after the Victorian Distillation Act of 1862, which attempted to prevent unlawful distillation by providing a tightly regulated, legal means to produce Australian whisky, gin and other distilled spirits[7]. In 1862-1863, The Warrenheip Distillery was opened by Robert Dunn at the base of Mount Warrenheip with an excellent supply of clean spring water[8]. Spirits were produced from barley, oats and wheat. Warrenheip malted, kilned and milled its own grain. The mash tun consisted of a giant cast iron pot, manufactured by Messrs Hunt and Opie, of the Victoria Foundry. Mixing, moving and heating was all powered by a powerful steam engine. The company operated until 1872 when it was liquidated due to financial troubles, attempting to get around £10,000. It was purchased by Henry Brind and the name changed to Henry Brind and Co., Maltsters and Distillers[18].</p></div>

				<div class="et_pb_text_inner"><p>Castelmaine Brewery, built in 1856 in Newcastle NSW was a large beer producer but also opened a distilled spirits branch. The company was renamed to Castlemaine Brewery Maltings and Wine and Spirit Company Limited in 1883. We haven’t been able to find out if they produced their own spirits or simply operated as a bond store and merchant for other brands, please send us a message if you have information to complete this section. The building still stands and is listed on the NSW State Heritage Register.</p>
<p>1888 saw the construction of the Federal Distillery in Melbourne. A truly massive distillery, the 3<sup>rd</sup> largest in the entire world at the time, producing over a million litres of spirit per year. This was split between whisky, gin and brandy.</p>
<p>The 1901 Distillation Act provided a minimum still size of 2700 litres, which made it very difficult for craft distilleries to operate. The whisky distilling scene in Australia would be dominated by large companies for the years to come.</p>
<p>In 1924, Federal Distilleries Pty Ltd was created by the joining of four VIC distilleries which were: Federal Distillery, Warrenheip (which was now called Henry Brinds and Co.), Brehney Bros and Kennas Pty Ltd.  Federal Distilleries released brands such as Brind’s Extra Matured Whisky and Old Court Whisky.</p>
<p>The massive Corio Distillery was built in Geelong in 1928, becoming Australia’s largest distillery, overtaking Federal Distilleries. By 1929, Corio Distillery was producing 500,000 gallons of Australian whisky per year, but wouldn’t release any until 1934, the whisky was aged at least 5 years in oak barrels [15]. Corio Distillery was built by Distillers Company Limited, a company which is now known as Diageo, the world’s largest spirits company. Diageo owns brans such as Jonnie Walker, Smirnoff, Tanqueray, Guinness, Captain Morgan and hundreds more [16]. Five Star Whisky by Corio became extremely popular and sold tens of millions of bottles, both in Australia and overseas. Before the release of Corio’s Australian whisky, the Australian market was completely dominated by Scotch whisky and Corio managed to turn this around. Domestic Australian production and consumption of whisky exceeded imported whisky for the first time. Alcohol consumption in Australia was high, previously making Australia one of Scotland’s top customers internationally. As Scotch whisky was aged for longer and priced higher, the whisky from Corio started to be seen as cheap rocket fuel and gradually fell out of favour with the general public. It definitely didn’t help that several pollution heavy industries moved in next door such as fuel and fertiliser refineries, the countryside around Corio wasn’t the same. If anyone has an open bottle we would love to try it! Luke McCarthy, author of The Australian Spirits Guide managed to track down some old <a href="https://ozwhiskyreview.com.au/milne-co-corio-whisky-review/">Corio and Milne whisky bottles to taste and scored them quite highly</a> [33].</p>
<p>In 1930, Federal Distilleries Pty Ltd, the Old Court Whisky Group and Corio Distillery all merged under a new company name of United Distilleries. [17]</p></div>

				<div class="et_pb_text_inner"><p>In the 1960’s, Australian import duties on spirits from other countries were lowered, making Scotch Whisky and Bourbon much more affordable. Excise tax rates on alcohol were also increased significantly and are still amongst the highest in the world. Before this new law, Australian whisky distilleries had a huge price advantage, which offered significant protection. After the import tariffs were lowered, the Australian whisky industry slowly but steadily declined until 1989 when Corio Distillery closed.</p>
<p>In 1990, Bill Lark started to try and overturn the 1901 Distillation Act which stated:</p>
<p>“(f) There must be erected in the still-house:</p>
<p>    (i) A still capable of exhausting in the case of a general distiller&#8217;s licence at least 675 litres of wash in an hour, and in the case of a wine distiller&#8217;s licence at least 225 litres in an hour, or a wash still capable of containing at least 2,700 litres, and also capable of containing double the quantity which the low wines or spirit still is capable of containing. In lieu of one still of the required capacity two or more stills aggregating the required capacity shall suffice.” [19]</p>
<p>Hence, it was very difficult for small craft distilleries to start out, massive financial backing was necessary to install equipment of such scale. Bill Lark started by talking to local Tasmanian MP Duncan Kerr, who then called the Federal MP Barry Jones. It turns out, both these MP’s came through with the goods and the law was overturned. Bill Lark then founded Lark Distillery in 1992 and paved the way for all craft Australian distilleries to come.</p>
<p>Sullivans Cove whisky distillery was setup shortly after Lark in 1994, in Sullivans Cove, Tasmania. It was then called simply <em>Tasmania Distillery</em>. In the early days, the quality of Sullivans Cove whisky was not what we know it to be today. Whisky takes a long time to mature, waiting for 12 years before payday just isn’t possible for most companies. Bottling whisky a bit too young and facing financial trouble, the company failed and in 1999 was bought by new owners. Bill Lark was hired to produce a quality single malt, who brought in his friend Patrick Maguire, who is the current head distiller of Sullivans Cove.  Business continued to struggle and in 2003 the second owners group threw in the towel. Patrick Magquire still had some energy left so decided to purchase Sullivans Cove himself, along with new investors. [20]</p>
<p>In 2014, Sullivans Cove won World’s Best Single Malt Single Cask at the World Whisky Awards. This achievement completely changed the trajectory of Sullivans Cove, but also put Australian whisky on the map, internationally. The winning cask was HH0525, French Oak Single Cask.</p>
<p>Headlands Distilling Co., was founded in 2015, though wouldn’t start distilling whisky until 2016, planning for a Christmas 2020 first release! Being the only producer of an oak barrel aged spirit made from native Illawarra Plums, Headlands Distilling Co., is using the ex-Illawarra Plum casks to mature a whisky which will be a world’s first.</p>
<p>Scotch whisky laws are very strict on barrel type, what was in the barrel etc, the same is not true in Australia. We are starting to see some super innovative casks types appear. In 2018 Old Kempton Distillery in Tasmania released the first Red Gum cask single malt whisky, which was also seasoned with McWilliams Apera.</p>
<p>In 2020, Archie Rose Distilling Co., in Sydney won World’s Best Rye Whisky, another massive achievement for Australian distillers, using virgin oak casks and unconventional malted rye[21].</p>
<p>As of 2020, Australia has around 300 distilleries, many of them producing great whisky. Some are starting to scale, some are happy staying as small family businesses. Even though there are hundreds of distilleries, Australian made spirits are still only around 2% of domestic spirits consumption, with the greater community preferring to purchase the cheaper, imported products.</p>

				<div class="et_pb_text_inner"><p>Just like Tequila, Cognac, Bourbon and more recently, Sherry, the naming of Scotch Whisky is legally regulated and can only come from a certain geographical location.</p>
<p>Scotch whisky can only be made in Scotland. Hence, any whisky made in Australia cannot be called Scotch, and is simply <em>whisky</em>.</p>
<p>Geographical location is not the only criteria for a spirit to be called Scotch whisky however, here are the other requirements [1]:</p>
<p>1) Scotch whisky must be distilled to a maximum alcohol content of 94.8% ABV. Distilling it to a higher purity than this will remove too much flavour, essentially making a vodka</p>
<p>2)Must be matured in oak casks not exceeding 700 litres. There is no minimum cask size</p>
<p>3) Must be matured only in Scotland, the oak barrel can’t leave the country!</p>
<p>4) The oak barrel must be either new or used to mature wine (still or fortified) or beer or spirits. The majority of Scotch Whiskies are matured in ex-Bourbon casks. Casks which have contained stone fruit products are not permitted. Beer casks which have had fruit or sweetener added after fermentation is complete are not permitted. Spirit casks which have had fruit, flavours or sweetener added after distillation are also not permitted [2].</p>
<p>5) Must be matured for a minimum of 3 years. This is different to Australia which is 2 years</p>
<p>6) Scotch whisky must be made from malted barley and yeast, but can also contain other cereal grains. Note that if the whisky is Malt Scotch Whisky or single malt whisky, it cannot contain other grains.</p>
<p>7) Fermenting with additional added enzymes are not permitted, the fermentation must get its necessary enzymes from malted barley.</p>
<p>8) No other materials can be added except for water and caramel colouring E150a, which is basically burnt sugar. It might come as a surprise, but many of the best known brands of Scotch whisky are actually coloured with this additive. Make sure to look out for brands which say <em>natural colour</em> or <em>no added colour</em></p>
<p><em>9) </em>Must be bottled at 40% ABV or higher</p>
<p>Within Scotch whisky, there is also finer detail provided which protects certain places within Scotland. These areas are Campbeltown (no, not the area southwest of Sydney), Islay (pronounced eye-la), Lowland, Highland and Speyside.</p></div>

<li>Single Malt Scotch Whisky</li>
<li>Single Grain Scotch Whisky</li>
<li>Blended Malt Scotch Whisky</li>
<li>Blended Grain Scotch Whisky</li>
<li>Blended Scotch Whisky</li>
</ul>
<p>Labelling requirements for Scotch Whisky are also very strict. For instance, it is illegal to have a whisky called 2008 or even mention 2008 in relation to distilling if the whisky was not distilled in 2008. This would trick people into thinking the whisky was older than it really is. Using numbers which trick the consumer into thinking the release is limited in batch size are also not permitted.</p>
<p>The age statement on Scotch Whisky must refer to the youngest whisky in the mixture. Average age is not permitted.</p>
<p>Just because Scotch Whisky can’t be made in Australia doesn’t mean that Australian’s can’t make excellent whisky! Sullivans Cove won world’s best Single Malt at the 2014 World Whisky Awards and world’s best Single Malt Single Cask in 2018 and 2019[3]. Archie Rose in Sydney has also won world’s best Rye Whisky in 2020[4]. Since the laws surrounding whisky production are different in Australia, some really creative whiskies are being created such as casks made from Australian native woods other than oak and innovative casks types such as Illawarra Plum cask whisky which Headlands Distilling Co., will release in 2021.</p>

<p><strong></strong></p>
<p>This simple yet famous Italian cocktail is a great way to enjoy gin, especially Australian craft gin. As with most cocktails, the exact historical origins are cloudy, but it is commonly accepted that the Negroni came from Florence, Italy in 1919.</p>
<p>Count Camillo Negroni loved the Americano cocktail, which is very similar to the Negroni, but on this particular night, the Count was keen to loosen up! He asked Fosco Scarselli to swap the soda water for gin to get the party started and the Negroni was born! [1]</p>
<p><span style="font-size: large;"><strong>Ingredients:</strong></span></p>
<p>30 mL gin</p>
<p>30 mL sweet red vermouth (aka vermouth rosso)</p>
<p>30mL Campari</p>
<p><span style="font-size: large;"><strong>Directions:</strong></span></p>
<ul>
<li>Fill a glass with ice</li>
<li>Add the gin, vermouth and Campari. One shot of each</li>
<li>Stir with a long spoon for 20-30 seconds until the drink is absolutely freezing</li>
<li>Strain the cold mixture into a short Old Fashioned type glass</li>
<li>Add a large piece of ice</li>
<li>Garnish with an orange peel or slice of orange</li>
</ul>
<p> What gin should you use? Any gin that you like! If you are in Australia, there is a huge range of delicious Australian gins to try.</p>
<p>Fun fact- Campari used to use smashed up insects/parasites to get its red colour, called cochineals. They stopped using this as of the year 2006 and now use commercially available dye. Cochineal is still found as a colourant in meat, drinks, ice cream, yoghurt, lollies and more!</p>

				<div class="et_pb_text_inner"><p>You might have just read out article, <a href="https://headlands.com.au/what-is-gin/">What is gin?</a> Now that you know what it is, let’s delve a little deeper into how gin is made. There are three main methods:</p>
<h1>1.    Maceration</h1>
<p>Gin botanicals such as juniper, coriander, citrus peels, angelica root, orris root, cardamom and cassia are soaked in strong alcohol in the still for a period of time. They can be soaked in another container and then pumped into the still, but the pump needs to be able to handle solids.</p>
<p>This is often one day, but can vary depending on the distillery.</p>
<p>The botanicals can be left whole or chopped up or powdered. More finely powdered botanicals will result in greater extraction of the compounds present in that botanical. This might seem like a simple task. If I don’t have enough of a certain flavour, I’ll just powder it so the alcohol can access a very high surface area. However, botanicals are often not the same all the way through. A seed might have a certain flavour on the outside skin of the seed and quite a different flavour inside if ground up. Think of this like an orange. The outside is very different to the inside. If you don’t powder the seed, the majority of the extraction will come from the outer layer. This results in limitless combinations of gins!</p>
<p>After the gin botanicals have been soaked or “steeped” in the strong alcohol. The still is heated. The alcohol and compounds extracted from the botanicals will carry over as vapour into a condenser, which simply cools the gas down, back into a liquid.</p>
<p>There you have it! Gin made by the maceration method.</p>
<h1>2.    Vapour infusion</h1>
<p>Instead of steeping the botanicals in the strong alcohol like in the maceration method, the botanicals are placed in some sort of container ABOVE the alcohol in the still. The still is heated up, and the alcohol vapour will pass through the botanicals, extracting some flavour, before being send to the condenser to be cooled back into a liquid. This is the method used by Bombay Sapphire (other distilleries do use it as well!).</p>
<p>The container can be a special polymer mesh bag which is hung inside the still, not touching the liquid, or it can be a metal container packed with botanicals which is joined to the still boiler by a metal tube.</p>
<p>Vapour infusion results in a different flavour than macerated gin. Firstly, the temperature is lower, so the botanicals are less “cooked,” which is not necessarily good or bad, just different. For instance, the temperature in the still boiler might be 85 degrees C, but the gas which boils off and passes through the botanicals will be at a lower temperature.</p>
<h1>3.    Steeping without distillation</h1>
<p>This is only an acceptable method of making gin in a survival situation with access to alcohol and botanicals but no still.</p>
<p>Take strong alcohol, soak juniper and other botanicals in it for a period of time. Strain, drink. No quality distillery in the world uses this method. When botanicals are extracted, there is no way to select which flavours are included in the gin. For instance, the harsh, turpentine flavours in some juniper berries will be extracted. If gin is distilled, the distiller can stop the still at any time, leaving harsh compounds in the boiler so they don’t taint the final product.</p>
<p>HOWEVER, steeping can be an excellent addition to infuse a high quality gin made with the maceration or vapour infusion method with a fruit or other special botanical. Sloe gin is made this way. Beautiful colour, sweetness and other compounds can be added to a gin this way which would normally not carry over from the still. Some gins are steeped in Thailand’s butterfly pea flower, which gives them a strong purple colour and ability to change colour in a gin and tonic due to a reaction with the carbonated water, cool stuff! Daalgaal gin by Headlands Distilling Co. is made by taking a maceration/vapour infusion Australian gin called Boobialla and then steeping it in locally hand foraged Illawarra Plum fruit, giving it a deep purple/red colour and extracting a unique taste but also several compounds which have proven health benefits. Illawarra Plums have a higher antioxidant concentration than blueberries, which is extracted into the spirit!</p>
<h1>What about vacuum distillation?</h1>
<p>At normal atmospheric pressure, water boils at 100 degrees C and ethanol (drinking alcohol) boils at 78 degrees C.</p>
<p>If you dramatically lower the pressure, by sucking gas out of the still at the condenser outlet, you can get water and ethanol to boil at less than 25 degrees C!!!!!</p>
<p>This method isn’t a method on its own, but can be combined with either the maceration or vapour infusion gin making methods. Higher temperatures accelerate chemical reactions and also extraction of compounds. By distilling using a vacuum at low temperature, some flavours which may be altered or even ruined by high temperature can be preserved, or a much lighter flavour of gin can be obtained. Also, if a certain flavour in a botanical which is undesirable but isn’t very soluble in water or alcohol is present, you can basically stop it from dissolving. Higher temperature results in greater solubility/flavour extraction.</p>
<h1>What about one shot or multiple shot gin?</h1>
<p>Again, either maceration or vapour infusion methods can be done as a “one shot” or “multiple shot” gin.</p>
<p>One shot means all the botanicals are placed in the still or vapour basket at once.</p>
<p>Multiple shot means botanicals are distilled individually or in groups, but not all together, and then blended back together to make the final gin. Multiple shot allows a distillery to keep a concentrated form of a single botanical and then easily switch up the recipe.</p></div>

				<div class="et_pb_text_inner"><p>While the exact history of the martini is unknown, the Australian martini traces its lineage all the way back to 2019, with a release of a gin made exclusively from Australian native juniper, Boobialla.</p>
<p>Coupled with a delicious Australian dry vermouth, the Australian martini is a perfect way to appreciate the subtle flavour of native juniper, which is much less intense that the common juniper, typically from Europe.</p>
<p>The first step is to chill the glass! Since the martini is a very strong cocktail, getting it as cold as possible is an important part of the cocktail. If you have access to a freezer, place the glass in the freezer. If not, fill the martini glass with ice while you mix the other ingredients to chill it.</p>
<p>Ingredients:</p>
<p>60 mL Boobialla Australian native gin (2 shots)</p>
<p>15 mL Maidenii Dry Vermouth (1/2 a shot)</p>
<p>Procedure:</p>
<p>Take a large glass ~500 mL</p>
<p>Fill the glass with ice</p>
<p>Pour in the gin and vermouth</p>
<p>Stir gently for 30 seconds</p>
<p>Stirring gets the cocktail really cold, as well as provides necessary dilution.</p>
<p>Take the glass out of the freezer or remove the ice from the glass if you chilled it with ice.</p>
<p>Strain the stirred mixture into martini glass, making sure no ice goes into the glass.</p>
<p>Garnish:</p>
<p>A twisted citrus peel</p>
<p>OR</p>
<p>One or three olives. It must be an odd number of olives! Green olives, not black.</p>

				<div class="et_pb_text_inner"><p>Illawarra Plums are a delicious Australian native bush tucker fruit from the east coast of NSW, first collected for study at Lake Illawarra in 1818 [1], though <span>Indigenous Australians have been eating it for thousands of years</span>. It is also called Daalgaal, Plum Pine and a few other names. The scientific name is podocarpus elatus. They have been shown to have an extremely high antioxidant content, even higher than that found in blueberries [2].</p>
<p>Illawarra Plum fruit is used by Headlands Distilling Co. to make Daalgaal gin, by steeping gin in the fruit for six months. The fruit is also delicious in a jam or chutney, check out the recipe below:</p>
<h2>Ingredients:</h2>
<p>Illawarra Plums, external seed removed- 1000 g</p>
<p>Sugar- 750 g, white sugar, caster sugar, brown sugar, it doesn’t matter.</p>
<p>Lemon Juice – 5 tablespoons</p>
<h2>Steps:</h2>
<p>1) Blend the Illawarra Plums into a paste. Chop them up super finely if you don&#8217;t have a blender.</p>
<p>2) Add all the ingredients into a saucepan and start gently heating</p>
<p>3) Keep stirring everything so it doesn’t burn, mashing it up while you stir</p>
<p>4) Turn the heat up to medium and keep stirring until all the sugar has dissolved</p>
<p>5) Bring the mixture to a boil and hold it there for 15 minutes</p>
<p>6) Put a plate into the fridge and get it cold</p>
<p>7) Take a small scoop of the boiling jam and drop it onto the cold plate</p>
<p>8) Once it has cooled down on the plate, poke the jam on the plate with your finger. If it is properly set, it will gel up and slightly coagulate when you poke it. If it is still runny, boil for another few minutes and try again. There is variability here, because it will depend on the water content of the Illawarra Plums</p>
<p>9) Once the jam is setting properly, pour it into a sterilised jar and store in a cool dry place. Refrigerate it once you’ve opened it. Alternatively, just place it in any jar and eat it quickly!</p>
<p>If you can’t find any Illawarra Plums locally, stop by the distillery! We are often giving away the “spent” Illawarra Plums which have been used to make our Australian gins for free. While a lot of the flavour has been removed during the steeping process, there is definitely lots left and they still make an excellent jam. We eat jam made from the “spent” Illawarra Plums on toast most mornings!</p>

				<div class="et_pb_text_inner"><p>Be it an Australian gin and tonic, a strong martini or simply sipping straight gin on ice, here is a list of some great foods to consider pairing with your gin at your next gathering.</p>
<p><span style="font-size: large;"><strong>Cheese</strong></span></p>
<p>The creamy, fattiness of a strongly flavoured cheese is a perfect accompaniment for gin. Cheese has a pallet coating effect, the alcohol will taste even smoother and fuller bodied than normal, especially if sipping straight. Vintage cheddar and camembert are two great options, with goat’s cheese increasing in popularity lately. Australia has loads of great local cheese makers, make sure to give them your support!</p>
<p><span style="font-size: large;"><strong>Cucumber</strong></span></p>
<p>Hendrick’s gin has a large cucumber component which has received international recognition. You can piggy back off Hendrick’s cucumber and gin pairing and include cucumber based dishes while drinking gin. Cucumber salads are a great option, as well as cucumber based canapé or appetisers such as small bite sized cucumber sandwiches or cucumber slices topped with feta, sun dried tomatoes and basil.</p>
<p><span style="font-size: large;"><strong>Quince paste</strong></span></p>
<p>A great addition to any cheese platter, especially when paired with gin and camembert with crackers.</p>

<p><span style="font-size: large;"><strong>Salmon</strong></span></p>
<p>There are various ways to cure salmon and lately, some really tasty recipes have emerged online for curing salmon with gin. Smoked salmon also pairs well with gin, with a squeeze of citrus giving an additional flavour boost. You can kill two birds with the one stone here, as many canapé recipes include cucumber and salmon together. See our recipe for Boobialla gin cured salmon here: (Coming soon!).</p>
<p><span style="font-size: large;"><strong>Berries</strong></span></p>
<p>If you can find them, native Australian muntries are perfect here! If not, blueberries, raspberries and strawberries are a great snack to pair with gin. You can also put them into your gin and tonic directly for a tasty fruit cup.</p>
<p><span style="font-size: large;"><strong>Cured meats</strong></span></p>
<p>Salami and chorizo are nice options here. Spicy or mild versions both pair well. Saltiness will enhance the gin’s flavour and the fattiness will provide additional mouthfeel and palate coating.</p>
<p><span style="font-size: large;"><strong>Macadamia nuts</strong></span></p>
<p>Why not use a native Australian nut with your food platter? Macadamias are completely native to Australia. Almonds are another good option, though grown in Australia, they are native to Iran and surrounding countries in Asia [1][2]. If you have Bunya pines in your area, roasted Bunya nuts are another great Australian native option to pair with Australian gin.</p>
<p><span style="font-size: large;"><strong>Coriander</strong></span></p>
<p>Coriander is one of the major ingredients of many gins. Light, fresh Vietnamese style food, rich in coriander is a great pairing for gin, particularly those with citrus notes. If your gin doesn’t have a citrus note, you can simply add a squeeze of lemon or lime to bridge the gap. Rice paper rolls are a delicious and healthy option.</p>

				<div class="et_pb_text_inner"><p>Australia has seen steady growth in the consumption of alcoholic spirits, with sales increasing from 64.4 million litres in 2014 to 66.1 million litres in 2019. The industry is dominated by Diageo Plc who account for over a quarter of sales, followed by Suntory Holdings (10%) and Pernod Ricard (8%)[1] . Whisky remains the largest seller in terms of volume (28 million litres), followed by white spirits (includes both vodka and gin) with 18.1 million litres[2]. Importantly, white spirits have been on an upward trajectory with an average 4.5% cumulative year-on-year volume growth between 2013-18 [3]. This is a remarkable achievement considering that whisky, rum and brandy have all suffered from contraction in volume sales over the same period.</p>
<p>Much of the growth in white spirits comes down to gin. The wide range of products available in the Australian gin segment appeals to a broad range of customers, that span multiple demographics. With the impact of COVID-19 still resonating in our ears, and the growing appetite for homemade cocktails, it is likely that the Australian gin market will continue to grow. Importantly, the frequent release of new products appeals to those that are eager to experiment with new flavour profiles, juniper combinations and botanical aromas. Headlands Distilling Company offers two examples of innovation in the segment with both Boobialla gin (using native Australian juniper) and Daalgaal gin (steeped with Illawarra plums) leveraging these trends. Where Boobialla appeals to consumers wanting to try unique Australian flavours, Daalgaal extends on this trend by coupling unique Australian bushtucker flavours with a visually appealing product that appeals to multiple sensory stimuli.</p>
<p>Interestingly, gin is the most consumed spirit behind whisky, with a recent Roy Morgan survey revealing that 8% of Australians had consumed gin at least once in the previous four weeks[4]. An indicator of the strength of the Australian gin market is demonstrated through consumption patterns among women, who now clearly prefer gin (9.3%) over vodka (6.8%). While these results are promising, we mustn’t forget that the Australian gin market is still dominated by mainstream brands offered by dominant market players such as Diageo and Barcadi (over 4 million litres of gin). Nevertheless, the craft spirits scene in Australia has grown to account for 6% of total spirits volume[5]. With the explosion in craft distilleries, the only way to survive is to differentiate and offer an experience that is unique, yet affords value for money.</p>
