Headlands Distilling Co was founded in 2015, in Wollongong, Australia. Our first single malt whisky is a testament to passion and perseverance.
“Our whisky journey began with a search for the perfect barley. We worked closely with an Australian grower, Michael Sinclair, who grew several varieties of barley for us to test. We spent countless hours perfecting the milling, fermentation and distillation of the grain to find the ideal variety. Our systematic investigation led us to a single variety of barley, which not only delivered a complex flavour profile, but produced an incredibly smooth spirit.” Dr Thomas Simnadis, PhD Nutrition and Grain Science
“With so many world-renowned Australian wineries, the search for the perfect barrels to age our whisky was never going to be easy. Rather than looking at the barrels themselves, we focused on the characteristics of Australian fortified wines. Once we established a short list of the best Australian fortified wines, we went about doing anything we could to secure the barrels.” Dr Lachlan Hingley, MchD. PhD.
At a bottling strength of 46%, these whiskies are smooth and bursting with flavour. Adding small amounts of water to neat whisky will release additional complexity. Have a seat with a Glencairn whisky glass and add drops of water while sipping for the full experience!
